Additional Information:
Bran, also known as miller’s bran, is the hard outer layers of cereal grain. It consists of the combined aleurone and pericarp. Along with germ, it is an integral part of whole grains, and is often produced as a by product of milling in the production of refined grains.

Bran is present in cereal grain, including rice, corn (maize), wheat, oats, barley, rye and millet. Bran is not the same as chaff, which is a coarser scaly material surrounding the grain but not forming part of the grain itself.

Bran is particularly rich in dietary fiber and essential fatty acids and contains significant quantities of starch, protein, vitamins, and dietary minerals.

The high oil content of bran makes it subject to rancidification, one of the reasons that it is often separated from the grain before storage or further processing.  Therefore the shelf life of this product is usually limited and will typically be between 3 – 6 months.

Storage Advice:
Refined flour is made from the endosperm of wheat with the bran and germ removed. It results in a fine, soft flour that’s light or white in colour. Refined flours include all-purpose, white, bread, cake, and self-rising flour.

Whole-grain flours are made from all three parts of the wheat or grain: germ, endosperm, and bran. This means the flour is high in fiber and nutrition, but it also means whole wheat flour will spoil faster. Whole grain flours included whole wheat, oat, rice, rye, nut (like almond flour).

The best way to tell if flour is rancid is by smell. If the flour has a musty, dusty smell or a sour smell, then it is past its prime. If it smells like flour should smell, then it is safe to use. Do not combine new and old packages of flour since it will shorten the shelf life of the new flour.

Here are some tips for maximising the shelf:

  • Store in an airtight container.
  • Store in a cool, dark cupboard.
  • Store away from direct heat or sunlight.
  • Suitable for home freezing.
  • Keep lid tightly closed when not in use.
