Soy flour is made by grinding whole dry soybeans into flour in the same way wheat kernels are ground into flour. Soy flour often contains considerable hull material, is more coarse, and may even be raw. Soy flour is often dry-toasted after grinding to improve flavor and digestibility.

Soya flour is extremely rich in protein, so it can be added to any food to enhance its nutritional content. It is often used in commercial products such as crisps and sausages. For the home cook, it is valuable for baking, making flatbreads, and thickening sauces. It is often combined with wheat or other grain flours before use. The Japanese use soya flour to coat sticky rice pastes, and the Vietnamese combine it with soya milk and honey to make pancakes.

Storage Advice:
Refined flour is made from the endosperm of wheat with the bran and germ removed. It results in a fine, soft flour that’s light or white in colour. Refined flours include all-purpose, white, bread, cake, and self-rising flour.

Whole-grain flours are made from all three parts of the wheat or grain: germ, endosperm, and bran. This means the flour is high in fiber and nutrition, but it also means whole wheat flour will spoil faster. Whole grain flours included whole wheat, oat, rice, rye, nut (like almond flour).

The best way to tell if flour is rancid is by smell. If the flour has a musty, dusty smell or a sour smell, then it is past its prime. If it smells like flour should smell, then it is safe to use. Do not combine new and old packages of flour since it will shorten the shelf life of the new flour.
