Penne (Italian pronunciation: [ˈpenːe]) is an extruded type of pasta with cylinder-shaped pieces, their ends cut at a bias. Penne is the plural form of the Italian penna (meaning feather but pen as well), deriving from Latin penna (meaning “feather” or “quill”), and is a cognate of the English word pen. When this format was created, it was intended to imitate the then-ubiquitous fountain pen’s steel nibs.

The penne are one of the few pasta shapes with a certain date of birth: In 1865, a pasta maker from San Martino d’Albaro (Genoa), Giovanni Battista Capurro, asked for and obtained a patent for a diagonal cutting machine. The new invention cut the fresh pasta into a pen shape without crushing it, in a variable size between 3 and 5 cm mezze penne (half pens) or penne (pens).

Boil a pan of salted water, add a tablespoon of olive oil, and pour in the pasta. Stir the pasta with a long-handled spoon to prevent it from sticking to the pan. Return water to the boil then simmer the pasta for 7 to 10 minutes, stirring frequently. Test the pasta beginning at 6 minutes to see if it is tender and slightly firm or “al dente.”

Storage Advice:
Once the package is opened, transfer to an airtight container or reseal the zip lock package and store in a cool dark place.  There’s really no need to freeze uncooked pasta, because it typically has a shelf life of a few years.  It does not freeze well because, it is really dry, there is no liquid component to freeze.

Here are some tips for maximising the shelf life:

  • Store in an airtight container.
  • Store in a cool, dark cupboard.
  • Store away from direct heat or sunlight.
  • Keep lid tightly closed when not in use.
