Maftoul or Palestinian couscous is a traditional staple food in Palestine, typically made and served in occasions and holidays. Couscous is originated in Morocco and brought by Moroccan migrants to Palestine where it has been modified to what’s called maftoul. Although maftoul is considered as a special type of couscous but it’s made from different ingredients and it also has a different shape.
Maftoul is an Arabic word derived from the root “fa-ta-la” which means to roll or to twist, which is exactly describing the used method to make maftoul by hand rolling bulgur with wheat flour.

Storage Advice:
Whole grains still need be stored carefully since the healthy oils are found largely in the germ of whole grains. Refined grains spoil more quickly than intact grains, because their protective bran layer has been broken up and oxygen can reach all parts of the grain.
Both whole grains and refined grains can be negatively affected by heat, light and moisture. Because each grain has a different fat content, their shelf lives vary. In general, follow these rules of thumb:
- Store in an airtight container.
- Store in a cool, dark cupboard.
- Store away from direct heat or sunlight.
- Keep lid tightly closed when not in use.
- Suitable for home freezing.
