Additional Information:
There are many different types of plants whose leaves are referred to as “bay leaves”, but the true bay leaf is scientifically known as Laurus nobilis, and this is the nutrient-rich variety that we are discussing here. Many other leaves have a similar appearance and aroma to true bay leaves, but not the same nutrient content. This plant is an evergreen shrub or small tree that is native to the Mediterranean region. Laurel trees used to be everywhere in the region, but changing climates have shrunk their natural growth region. However, bay leaves have been a part of the culinary and medicinal culture for thousands of years, dating back at least to Roman times.

Bay leaves offer a realm of many possibilities for improving your food. Add to slow-cooking meals. Bay leaves release their flavour during slow cooking, so the longer the better. Consider adding bay leaves to casseroles, stews, soups, marinades, pasta sauces. Bay leaves also impart a great flavour to white, cream/cheese sauces (for example, béchamel sauce).

The flavour of bay comes out nicely with steaming. Try with vegetables, fish, seafood, or chicken in a steamer.

Always remove after cooking and prior to serving. Although bay leaves impart a lovely flavour to the food with which they are cooked, they are not appetising in themselves. Anyone who has bitten into the forgotten bay leaf will quickly attest to this! Fish it out before serving the dish on plates. This is also why it’s important to put the whole bay leaf into the dish, so it can be removed easily later. Don’t break it up into small pieces.

Use for decorative effect. Bay leaves can be used in potpourri, wreaths and other decorations, such as the dried orange and bay leaf hanger pictured here. They provide a “Provençal” touch.

Storage Advice:
“How long do dried herbs last?”
Depends on both the type of herb and the conditions under which they are stored. Correctly dried and stored herbs do not actually spoil. But over time, they will lose their potency, aroma and flavour.

As a general rule, whole dried herbs (not been ground) will last much longer than ground and can last for 1 to 3 years. It is also never a bad idea to freeze any spare herbs, try to remove as much air as possible and make sure it is kept sealed in the freezer to avoid moisture.

Here are some tips for maximising the shelf life of your herbs:

  • Store in an airtight container.
  • Store in a cool, dark cupboard.
  • Store away from direct heat or sunlight.
  • Keep lid tightly closed when not in use.
