Additional Information:
This is the British term for sugar with small grains that are between granulated and icing sugar in terms of fineness. The less refined a sugar the better the balance between nutrients (flavour) & calories becomes. Caster is a very fine grade of sugar, so-named as the grains fit through a ‘caster’ or sprinkler.  It is sometimes spelled castor sugar, and is known as ‘superfine’ sugar in America. Valued for its quick-dissolving properties.

Storage Advice:
Once the package is opened, transfer to an airtight container or reseal the zip lock package and store in a cool dark place.

Sugar will keep indefinitely (or at least up to two years) if stored properly. Store both granulated and confectioners’ sugar in a cool, dry place, in an airtight container or freezer bag, away from moisture of any sort. It can develop clumps when exposed to moisture. Keep the sugar way from spices and pungent-smelling foods: it can absorb scents from other foods, and nobody wants their butter cream tasting like curry. It is not suggested to refrigerate sugar, as this can encourage lumps to form.

Some benefits of proper food storage include eating healthier, cutting food costs and helping the environment by avoiding waste.

Here are some tips for maximising the shelf life:

  • Store in an airtight container.
  • Store in a cool, dark cupboard.
  • Store away from other pungent herbs and spices.
  • Store away from direct heat or sunlight.
  • Keep lid tightly closed when not in use.
