Additional Information:
A long-standing form of cracked whole-wheat. It has an excellent taste and is good nutritionally. Bulgar has been steamed already, so cooks faster. Use one cup of Bulgar to two cups of water, bring to the boil and simmer gently for 15 – 20 minutes. Before serving, fluff with fork and season to taste.

Pale-brown, pointy-shaped bulgur wheat is made by parboiling, drying, then coarsely grinding wheat berries. Bulgur wheat is rich in protein and minerals and has a nutty taste. Traditionally, the outer bran husks were removed by rubbing moistened wheat between one’s hands; the remaining grains were cracked. These days, the process is usually mechanised. Bulgur wheat is also known as bulgar or burghul wheat. In America, it is called cracked wheat, though that generally denotes a whole wheat variety.

Used in Middle Eastern, North African and Eastern European cookery, bulgur wheat is added to soups, rissoles, stuffed vegetables, and salads such as tabbouleh. The medium grade requires less soaking and cooking, so it’s ideal for salads and Lebanese kibbeh. The coarse grade can be cooked for a long time without becoming soggy, so add it to casseroles, or steam or boil and serve as an accompaniment to spicy stews.

Storage Advice:
Whole grains still need be stored carefully since the healthy oils are found largely in the germ of whole grains. Refined grains spoil more quickly than intact grains, because their protective bran layer has been broken up and oxygen can reach all parts of the grain.

Both whole grains and refined grains can be negatively affected by heat, light and moisture.  Because each grain has a different fat content, their shelf lives vary. In general, follow these rules of thumb:

  • Store in an airtight container.
  • Store in a cool, dark cupboard.
  • Store away from direct heat or sunlight.
  • Keep lid tightly closed when not in use.
  • Suitable for home freezing.
